Lunch and Learn – Mozzarella

Just as our Teams prepare for the coming season with training camps and conditioning, the full time employees of Maple Leaf Sports & Entertainment prepare ourselves with our own corporate ”training camp” workshops.  Throughout the year several of the Companies leaders will deliver sessions that not only push ourselves to become better managers and leaders but also push us to learn more about ourselves and our colleagues.

Building on the success of Lunch and Learn – Lobster; Senior Director of Culinary, Robert Bartley, recruited his culinary team to teach a select group of MLSE full timers how to make homemade mozzarella.  This wasn’t just any group of people.  In order to be selected for the session we each had to submit our favorite recipe

using mozzarella and from our submissions, Chef would select his class.

Arriving to the kitchen the culinary team got all of us set up in chef whites and then gave us a quick tour of the heart of our culinary program, the Main Kitchen.  Production for our concessions stands and catered events, plates of food for dinner service in the Platinum Club Restaurant and countless hours of testing and refining recipes all happens here.

Now it was our turn to get hands-on in the kitchen.  Following closely to the recipe provided by Chef and

under the watchful eye of his team we measured, poured, stirred, heated, cooled and pressed.  The end result was our very own mozzarella that we were able to take home to share with our friends and family!  Once we were done cooking we were treated to an amazing spread of Homemade Charcuterie prepare by Air Canada Club Chef De Cuisine, Tyler Cunningham, Caprese salads prepared by the Culinary Team and Tiramisu from our Restaurants & Catering Chef De Cuisine, Kristina Lewis.

Overall it was a delicious break and a great learning experience, but more importantly an amazing opportunity to interact with our colleagues and share our passion for food.
